Midsummers Eve

I can´t believe that it is already midsummer.

My life has lately been more stressfull than normally - but this thursday I graduated as a teacher :-D
I have been to school for 20 years…. got another degree as well, so I guess it was time to decide enough is enough !
Well I have not been the best mum lately, my 6 month old puppy needs attention,
as well as my house and my garden….
Lately we have had lots of rain and hot weather, wich means that my garden is a bit overgrown… it will take weeks to get it under control or more correct under as much control as I like ;-D
Saturday Eve we danes celebrated Midsummers Eve with bunfires around the coasts and danish summer cuisine, old songs and happy kids.
I spent my evening under huge beech trees next to the beach at a old ship yard
- it always amazes me how wonderfull it is to see the bunfires along the coast under a pale purple sky - it does not get very dark here around this time of the year, hear people chat, sing the sungs that we only sings this time of the year - connect with each other and nature - knowing that the sun slowly will loose its power.

We had a lovely bbq and I had made a yummi cake:

4 eggs beaten with 200 g canesugar untill foaming
add melted 125 gram butter
add finely scredded lemonpeel
50 gram almond meal
50 grams white spelt.

Bake aprox 20 min at 175 c just like a spongecake.

Top it with whitechocolate mousse or just whipped cream and lots of strawberries.

White mousse : melt 150 gr whitechocolate with 3oo ml full fat cream.
Put into fridge and cool down untill very cold- beat to a rather stiff whipped cream.

Now it is time for me to restore myself, sleep well, eat better food again, get exercise and weed my garden

  1. Your midsummer celebrations sound like so much fun. It’s mid winter down here but the sun is shining and I’m enjoying eating more grains - I do every winter - but this winter it’s not hurting my belly. Yay, finally I’ve healed my large intestine enough to enjoy grains! I’m sure its because last year I did a lot of work detoxifying heavy metals (mercury), everything works much better now. I’ll get around to telling my story about that experience soon. Winter is enjoyable without depression and gut pain - who’d have known. I’ve been making warm raw chocolate milk drinks. Will put the recipe on my blog soon also. Congratulations on finishing your studies. Let me see does that mean can teach archeology at university now? Enjoy giving your all to your daughter, puppies and garden. Blessings, Joanne

    Your midsummer sounds bliss. I too will graduate with a degree, just before I turn 34. I can not wait. Studying and working makes you extremely grateful for the rare moments of peace and relaxation. Congratulations on graduating!

    Well it is never too late- thanks for the congratualtions :-D

    Joanne actually this is my 3d education.
    I graduated as a BA in Prehistoric archeology.
    Decided to do a MA in history - but ran out money and interest.
    After being unimployed/ only bad jobs for a while, I decided to go back to school an get a special short teacher degree ( for people with a degree already) so no I won´t be teaching archeology but kids.
    Intersting about your experience.
    Grains are really not my best friends… I can handle about 1 serving a day…
